The chicken we use is Oyama chicken from the famous chicken shop Gotanda Shinanoya.

For our yakitori, the meat is not skewered, but placed in a basket and shaken to cook evenly all over, and then finished by starting a flame to give it the aroma of binchotan charcoal.The grilling process brings out the maximum aroma (smoke) of the binchotan charcoal, and you can enjoy the tenderness of the meat that you can't get with skewered yakitori.
